This golden toastie walks the perfect line between sweet and savoury. Brie works brilliantly here thanks to its low melting point, which means the cheese turns soft and gooey moments after it hits the pan. If you fancy, add a little chopped garlic in with the rosemary.

Ingredients
- 8 whole hazelnuts, lightly crushed
- 1 tsp olive oil
- 1 rosemary sprig, leaves chopped
- 1 tbsp clear honey
- 2 brioche slices
- A knob of butter, softened
- 75g Brie, sliced
Method
- Toast the nuts in a small dry frying pan for 5 minutes or so until golden. Add the oil and rosemary and sizzle for 1 minute, then remove from the heat. Stir in the honey.
- Heat a separate frying pan or griddle. Butter the brioche on both sides and cook in the pan on one side for 2 minutes. Turn the bread and lay the cheese on one toasted slice.
- Spoon the hazelnut honey over the cheese and press the other side of bread on top, toasted-side down.
- Cook the sandwich for 2-3 minutes on each side, pressing down firmly with a spatula until toasty and golden.
