This is a little nod to my friend Julian Temperley, who produces cider, perry, cider brandy and other apple and pear drinks at Burrow Hill in Somerset with fruit from his own orchards. He’s the only person in the UK producing cider brandy under licence which is the equivalent to French calvados. It’s most certainly on a par with the great producers on the other side of the Channel. Depending on the sweetness of the apple juice, you may want to add a little sugar syrup to the mix.

Prep time: 5 minutes

Serves

Ingredients

  • 2 measures of cider brandy (or calvados)
  • 100ml perry
  • 75ml good-quality pressed apple juice
  • juice of ½ lemon
  • 1 small egg white

Method

  1. Quarter fill a cocktail shaker with ice. 
  2. Add the cider brandy, perry, apple juice and lemon juice and shake well. Add the egg white and shake for 20 seconds or so. 
  3. Strain into cocktail coupes or tumblers.
