Creamy korma dressing recipe

Terrific in a modern coronation chicken salad (leaves, mango, avocado and chicken) or a rice salad, this is also lovely on a leafy side salad with any main course that has Indian flavours.

Timings

Prep time: 5 minutes

Makes

100ml

Ingredients

  • juice of 1 lime 
  • ½ tsp caster sugar (or to taste) 
  • 1 tsp korma paste 
  • 2 tbsp groundnut or rapeseed oil 
  • 2 tbsp single cream (you may need more)

Method

  1. Using a fork, whisk everything together except the cream, then whisk that in too. Taste the dressing for seasoning.
