Paloma cocktail recipe

For parties, my vote goes to the paloma: at its simplest, a long, refreshing drink of tequila poured over ice and topped with grapefruit soda. Many recipes also include a vibrant squeeze of fresh lime juice. Some also add fresh grapefruit juice and agave or sugar syrup.

Obviously, for a party, scale up. You can batch-mix the first four ingredients a few hours in advance and store in the fridge until needed.

Timings

Prep time: 5 minutes

Serves 

Ingredients 

  • 50ml silver tequila (I used El Jimador Blanco)
  • 15ml freshly squeezed grapefruit juice
  • 15ml lime juice
  • ½ tsp sugar syrup
  • grapefruit soda to taste, but at least 60ml per serve
  • lime or grapefruit slice, to garnish

Method 

  1. Mix the tequila, grapefruit juice, lime juice and sugar syrup. 
  2. When ready to serve, pour into an ice-filled tumbler or highball, top with grapefruit soda and garnish.
