White port and tonic cocktail recipe

This is the way to drink port in summer, and how they enjoy it on boats on the sparkling waters of the Douro in Portugal. My favourite white port is the superb Quinta da Pedra Alta White Port (18%, Master of Malt, £17.72 for 50cl) which has subtle flavours of guava and fresh pear. 

Also good and more readily available is Graham’s Blend No. 5 White Port (19%, Waitrose, £28.99 for 75cl down to £23.99 until July 30). If you are using Quinta da Pedra Alta, make orange slices the garnish; for the Graham’s No. 5, it’s fresh mint and lemon slices.

Timings 

Prep time: 2 minutes

Serves

10

Ingredients 

  • 500ml white port
  • 800ml Fever-Tree Refreshingly Light tonic water
  • orange slices, lemon slices and fresh mint, to serve (see note above)

Method

  1. Pour the white port into a jug. Immediately before serving, add the tonic water and stir.
  2. Pour into ice-filled tumblers or wine glasses and garnish.
